Forged in Thiers, the Ideal Périgord Sabatier collection combines French tradition and authentic charm. Its forged steel knives combined with a walnut wood handle offer elegance, balance and comfort, for precise and pleasant cuts on a daily basis.
Stemming from the Japanese tradition, the Nakiri knife is specially designed or cutting vegetables. Its tall, straight and thin blade allows for clean, fast and even cuts, without crushing food. Thanks to its rectangular shape, it can also be used as a spatula to pick up and transfer cut food.
This Nakiri knife features the iconic design of the Ideal collection with a POM handle. This very popular knife shape embodies the shape of French kitchen knives and has established itself in kitchens all over the world.
This model is 100% forged, i.e. it is made of a single piece of steel heated and stamped at 1200°C to form a single block of blade, bolster and tang, thus guaranteeing robustness and longevity.
It provides a balanced weight distribution making it very pleasant to use and alleviating the feeling of fatigue.
Its blade, with a straight back, is forged from nitrogen-enriched 4116 NITRO+ stainless steel.
With a hardness of between 58 and 60 HRC, this high-performance French steel with a cutting angle of 12.5° (i.e. a total cutting angle of 25°) ensures a precise cutting edge and optimal cutting hold, even after daily use.
This Nakiri knife finds the perfect compromise between performance and ease of maintenance, particularly with its high resistance to corrosion.
Its POM handle is known for its resistance to humidity, thermal shocks and daily wear and tear. Its ergonomic shape ensures a comfortable grip, even during prolonged use. The three brass rivets ensure a secure attachment and its corbin at the end of the handle gives it security.
